I have been getting excited about Valentine's Day this year. I don't know why. But you may have noticed my renewed obsession with Pinterest as I comb the site for fun holiday ideas. I got it into my head that I wanted to make monster cookies with pink and red M&Ms, so I began looking for a good recipe. This is what I found. I love it! Andrew--well, he's only so-so on it but who can trust a guy that doesn't have a "sweet tooth" let alone a "sweet cell" in his body?
This recipe isn't so much monster cookie as a peanut butter oat cookie but I like it better than the oat heavy monster cookies.
VALENTINE’S DAY MONSTER COOKIES
1 c. salted butter, softened 1 c.
brown sugar
½ c. sugar 1
½ c. creamy peanut butter
2 eggs 2
t. vanilla
1 t. baking soda 2
½ c. flour
1 c. quick oats
1 c. quick oats
1 ½ c. Valentine’s M&Ms (any
size or variety) 1 c. semi-sweet
chocolate chips
In a large bowl, cream the butter
and sugars together on medium speed, about 3 minutes. Mix in the peanut
butter, egg, and vanilla (in that order). Scrape down the sides of the bowl as needed.
Slowly mix in the baking soda and flour. Do not overmix. Fold in the
quick oats and chocolate chips. Add M&Ms by hand. Rolls balls of dough, about 2 Tablespoons of
dough per ball, onto prepared baking sheet lined with silicone mat. Press
a few extra M&Ms on top for looks. Bake at 350 for 7-8 minutes. Slightly press down the baked cookies with
the back of a spoon, since the cookies only slightly spread in the oven.
Allow cookies to cool on baking sheet before transferring to a wire rack.
Cookies will firm up as they cool.
